Sizzling Harissa Eggplant with Chickpeas

If you’ve never grilled a whole eggplant before, this is your sign. It turns impossibly creamy, then gets piled high with a saucy harissa chickpea mixture that’s made for scooping up with flatbread or just eating straight from the eggplant.

It’s officially grilling season, baby! And I’m fully leaning into it with this Sizzling Harissa Eggplant with Chickpeas. We’re grilling whole eggplants until they collapse into something soft, smoky, but still sturdy, then piling them high with a harissa chickpea mix that turns everything saucy, spicy, and deeply filling. It’s a layered, easy grilling dinner, and I love how its fully vegetarian, too!

You can absolutely use your oven for this but what I love the grill because 1. it gives me an excuse to cook outside, and 2. the eggplant basically cooks itself into perfection. It steams inside its own skin while the outside chars, so you get this super creamy interior that becomes the perfect base for all that harissa, tomatoes, and chickpeas to soak right in.
