Death by Chocolate Cookies

Halloween is here and so are these cookies covered in candy, dripping in oreo crumbles and filled with enough dark chocolate flavor to make you swoon. Candy-holics, this one is for you!!
Kind of a joke, but don't operate heavy machinery after eating. :)

Equipment

Ingredients

For the cookies
  • 8 oreos, 69 grams of cookie, 23 grams of cream
  • 1/2 cup (113g) salted butter, divided and softened
  • 1/3 cup (72g) 5% fat greek yogurt
  • 1/4 cup (50g) dark brown sugar, packed
  • 90 g granulated sugar
  • 1 large egg
  • 1/2 cup (70g) all-purpose flour
  • 1/4 cup (25g) cocoa powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon Diamond Crystal kosher salt
  • 158 grams candy of choice, such as Butterfingers, Crunch bars, M&Ms, Heath Bars or Twix
For the coating
  • 4 oreos
  • 2 tablespoons (30g) turbinado sugar
  • 1/4 teaspoon Diamond Crystal kosher salt

Instructions

  1. Separate the 8 oreos, scraping the cream filling into a small bowl and setting it aside for later.
  2. Add the oreo cookies to a food processor and pulse until finely crushed. Transfer the crumbs to a large bowl.
  3. In a medium pan over medium heat, melt 57 grams of butter. Let it fizz and foam for about 4-5 minutes, or until the milk solids are toasted at the bottom and the butter is nicely browned. Pour it directly over the oreo crumbs and add 72 grams of yogurt. Mix to combine then transfer to the fridge to cool for 10 minutes, until it's the textured of softened butter.
  4. Add the remaining 57 grams of softened butter, 50 grams of dark brown sugar and 90 grams of granulated sugar to the bowl and beat with an electric hand mixer until fluffy. Add the egg and beat again for 2-3 minutes, until the dough looks very whipped.
  5. In a separate small bowl, whisk together 70 grams of flour, 25 grams of 100% cocoa powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt. In two batches, mix this into the wet ingredients. Stop mixing as soon as a soft dough forms.
  6. Chop up 158 grams of chocolate candies. I like a mix of Butterfingers, Crunch bars, M&Ms, Heath Bars and Twix. Mix the candy in with the dough then transfer it to the fridge to chill for 10 minutes.
  7. Preheat the oven to 350°F convection, or 375°F standard.
  8. For the coating, crush 4 oreos in the food processor then mix them with 2 tablespoons Turbinado sugar and 1/4 teaspoon salt.
  9. Scoop the cookie dough into nine 70 gram balls. Coat them in the crushed oreo sugar then place them on two parchment-lined baking sheets and bake for 14-16 minutes.
  10. Swirl the oreo cream from the beginning into the baked cookies (it will warm up and be easy to swirl), and press in some extra candy pieces. Let the cookies cool so the candy sticks, then enjoy!
