You asked for my favorite, I give you my favorite. This is the first installment of my 35 Chocolate Chip Cookies Series and I’m starting off with the OG!

This series is where I talk about all my chocolate chip cookie recipes, the differences between each and how you can tweak them to make it your own! I tweaked this one particularly to my tastes, crisp on the outside, gooey in the middle, a crinkly top and juuust enough height, but not too tall. Plus I made it vegan to make it an impact-minimizing recipe!

But of course, everyone has different cookie tastes, so get ready for this series! There’s going to be lots of cookie facts to come…

Watch the recipe video here:

I have a million chocolate chip cookie recipes (cripsy, thicc, chewy, oaty, shortbread-style, the list goes on…) but I have NO issue choosing a favorite child, and here she is! Crisp edges, gooey on the inside and stays soft for days – this recipe is a winner.

Equipment

  • stand mixer or hand mixer
  • baking sheets
  • parchment paper

Ingredients

  • 1 & 1/3 cup spooned & leveled all-purpose flour, 150 grams
  • 3 tbsp cornstarch, 25 grams
  • 1 ½ tsp baking powder
  • 3/8 tsp salt
  • 8 tbsp unsalted butter, or vegan butter, room temperature, 113 grams
  • ½ cup dark brown sugar, packed, 100 grams
  • 1/4 cup granulated sugar, 50 grams
  • 1 tsp vanilla
  • 2 tbsp whole milk or plant-based milk
  • 3/4 cup chocolate chips or chopped chocolate, 90 grams

Instructions

  1. Whisk together the flour, cornstarch, baking powder and salt
  2. In a separate bowl, cream the butter, brown sugar, granulated sugar and vanilla together. Cream on medium speed, scraping down the sides every few minutes, until the butter has visibly lightened in color and looks fluffy. Add 1 tbsp of milk at a time and beat into the butter mixture until smooth. This should take about 5-6 minutes total.
  3. Fold the dry ingredients into the wet until just combined, then add the chocolate and mix.
  4. Chill the dough in the fridge for 1-4 hours.
  5. When you are ready to bake, preheat the oven to 350F.
  6. Split the dough into 12 even balls, weighing about 45g each.
  7. Place on parchment lined baking sheets and bake for 12-14 minutes.
  8. Take it out of the oven when they still seem slightly underdone, then let them cool completely **this is the most important step!**
  9. Serve whenever!

I can’t count how many times I have made this recipe over the past year plus. They are the best cookies I have ever had & many people have told me the same thing. I like to offer to make other types of baked goods for events/people but I’m ALWAYS asked to make these in addition to or in lieu of what I was initially planning. Yes, they are that good. I’m a mom that bakes at home for fun & have mastered this recipe, it’s so straightforward. I routinely batch the dough to keep the freezer stocked. On top of it all, Justine’s style & genuine passion for connecting through cooking shines through every bite! Make these!

I just made these cookies with normal an vegan butter. They both turned out great bute they are super thin, nothing like in the picture/video. The only mistake i can think about is the time i mixed butter&sogar. Maybe it was too long and the mixture too fluffy?

Hi Zoe! A fluffy mixture should make your cookies thicker and taller, so having well creamed butter is a good thing! My only guess would be either too much sugar or not enough flour, did you measure everything by grams?

I love this recipe!! It’s as easy the recipe on the back of the bag but the results are stellar. I love a CCC with a crispy outside and tender inside, and this one is just that. And the flavor from the brown sugar is perfection. Absolutely my go-to, keeper chocolate chip cookie recipe!

Mixed up my first batch and can’t wait to bake tomorrow! I am a bit confused with the recipe as I measured everything in grams but it was much drier than that shown in the video. The video also gives some different measurements & bake temp/times. Can you confirm which is correct? Thank you for all the passion and testing you put into each and every recipe. It really shows in the final product!

Hi Sarah – thank you for flagging this! The recipe on the blog is the correct one, since this is a very old recipe, my videos are just as old and need some updating! But the blog is always the most correct and up to date! I hope you enjoyed these, and if I can tempt you with a more recent + tested recipe, I love this one: https://ventre-mince.today/brown-butter-and-bread-flour-chocolate-chip-cookies/%3C/a%3E%3C/p%3E
