Chocolate Chickpea Waffles

I know, I know. When you think chocolate you do not immediately think – ok garbanzo beans go with that. But just trust me on this one. These Chocolate Chickpea Waffles are the softest, sweetest chocolate waffles, and the chickpeas only help the cause! The beans add an extra layer of structure to the waffles (seriously, waffles do need structure) and they also add a level of moisture to the batter, without you ever noticing that there are chickpeas in it.

Honestly, if Trader Joe’s can start normalizing chocolate hummus, we can start normalizing chocolate chickpea waffles. They are just so good that I won’t let you give up on them! Plus they are packed with satiating ingredients that will keep you full for hours, they are super affordable to make and the batter comes together in less than 30 seconds. What could be a better breakfast?

These waffles are great for kids and picky eaters (well, I have none of those, but I can only imagine), plus they are just good for any ol’ waffle fix. I love making them as a meal prep recipe and eating them throughout the week, but I also love using them for a lazy brunch. It truly is the perfect breakfast recipe!

What you’ll need to make these chocolate waffles

Once you get past the drama of the chickpeas, the ingredients are insanely simple. I’m not even making you use Dutch process cocoa on this one! (but you still should invest in Dutch process cocoa… it’s the best!)

These are all pantry staples that I’m sure you have around, especially if you’re a baker or a chocolate aficionado. Here’s all the ingredients I use:

  • 80 grams canned chickpeas, drained and rinsed (1/2 cup)
  • 1 large egg (if you’re vegan I love using JustEgg or VeganEgg as a sub!)
  • 1 large egg white
  • 35 grams rolled oats (1/3 cup)
  • 2 tablespoons cocoa powder
  • 2 tablespoons maple syrup
  • 1/4 cup plant-based milk of choice, I use almond!
  • 3/4 teaspoon baking powder
  • 1 pinch of salt

Can I make these into pancakes?

This is a common question on my waffle recipes, and vice versa! And the answer is: I don’t see why not! The big difference is that if you take a pancake recipe and turn it into a waffle recipe, it won’t be as crispy. But since this is a waffle recipe, it can pretty easily translate to pancakes.

All you need to do is grease a skillet, set it to medium-high heat and cook just like you would a normal pancake! But this time it just happens to be a delicious, chocolatey, protein-packed pancake.

Chocolate Chickpea Waffles

I know when you think of chocolate, the last thing you think of is chickpeas. But these waffles are seriously the BEST, and they use the lil garbanzo bean! They are so rich, moist and chocolatey, plus they use oats as the flour so they are gluten-free! A great breakfast for kids or meal prep, or even for just a lazy weekend breakfast!

Ingredients

For the batter:
  • 80 grams canned chickpeas, drained and rinsed, 1/2 cup
  • large egg
  • 1 large egg white
  • 35 grams rolled oats, 1/3 cup
  • 2 tablespoons cocoa powder
  • 2 tablespoons maple syrup
  • 1/4 cup plant based milk of choice, I use almond!
  • 3/4 teaspoon baking powder
  • 1 pinch salt
For the toppings:
  • 2 tablespoons maple syrup, plus more to taste
  • 1 tablespoon powdered sugar
  • 1 tablespoon vegan butter

Instructions 

  1. In a blender, add all the ingredients for the batter. Blend on high until a smooth batter forms. Let the batter sit for about 5-10 minutes to thicken slightly.
  2. Heat up a waffle iron and use a spray cooking oil to lightly grease it. Depending on the size of your iron, this should make 2 large waffles or 4-5 mini waffles. (I love my Dash mini waffle iron!)
  3. If you'd prefer to make pancakes, grease a skillet and cook on medium-high heat for 2 minutes on each side. It should make about 3-4 pancakes.
  4. When they are still warm, top with your toppings and serve!

    These were delicious! I was wondering if I didn’t want chocolate waffles if I could simply omit the cocoa powder or would I need to substitute something else?
