I know when you think of chocolate, the last thing you think of is chickpeas. But these waffles are seriously the BEST, and they use the lil garbanzo bean! They are so rich, moist and chocolatey, plus they use oats as the flour so they are gluten-free! A great breakfast for kids or meal prep, or even for just a lazy weekend breakfast!
80gramscanned chickpeas, drained and rinsed, 1/2 cup
largeegg
1large egg white
35 gramsrolled oats, 1/3 cup
2tablespoonscocoa powder
2tablespoonsmaple syrup
1/4cupplant based milk of choice, I use almond!
3/4teaspoonbaking powder
1pinchsalt
For the toppings:
2tablespoonsmaple syrup, plus more to taste
1tablespoonpowdered sugar
1 tablespoonvegan butter
Instructions
In a blender, add all the ingredients for the batter. Blend on high until a smooth batter forms. Let the batter sit for about 5-10 minutes to thicken slightly.
Heat up a waffle iron and use a spray cooking oil to lightly grease it. Depending on the size of your iron, this should make 2 large waffles or 4-5 mini waffles. (I love my Dash mini waffle iron!)
If you'd prefer to make pancakes, grease a skillet and cook on medium-high heat for 2 minutes on each side. It should make about 3-4 pancakes.
When they are still warm, top with your toppings and serve!
