Vegan & Gluten Free Funfetti

For my one year anniversary as a recipe developer, I just had to make a cake - but my way. This nutritious version of funfetti is filled with whole foods, healthy fats and is gluten free and vegan! Plus the best part - it is moist, delicious and absolutely to die for. This funfetti might make you forget about the boxed version (key word...might ;)

Ingredients

  • 150 grams oat flour
  • 1 tsp baking powder
  • 1/8 tsp baking soda
  • 1 pinch kosher salt
  • 3/4 cup tahini, or almond butter will also work!
  • 3/4 cup maple syrup
  • 1/2 cup almond milk
  • 1 & 1/2 tsp vanilla
  • 1/4 tsp almond extract
  • 1/4 cup colored sprinkles, plus extra for topping

Instructions 

  1. Preheat your oven to 350F.
  2. In a large bowl, whisk together the oat flour, baking powder, baking soda and salt.
  3. Add in the tahini, maple syrup, almond milk, vanilla & almond extract. Whisk together until the dough is well combined.
  4. Stir in the sprinkles until evenly distributed.
  5. Pour the batter into a parchment lined 8x8' baking sheet. Top with extra sprinkles.
  6. Bake at 350F for 25-30 minutes or until you can insert a toothpick and it comes out clean.
  7. Let cool completely before slicing! It will be slightly tender, but still delish!
