Healthy Hot Chocolate Oatmeal

This oatmeal tastes rich and decadent like European-style hot chocolate, but it's filled with high-fiber, potassium-rich ingredients that will help you start off your day with energy - while feeling just like dessert.

Ingredients

For the hot chocolate topping:
  • 1 large very ripe banana
  • 1 large medjool date
  • 1 tablespoon maple syrup
  • 1/4 cup cocoa powder or cacao powder
  • 1 cup milk of choice, (for more protein, you can swap this for a protein drink)
For the oatmeal:
  • 1 cup old fashioned rolled oats
  • 2 1/4 cups water
  • 1/4 teaspoon Diamond Crystal kosher salt
Optional, for topping
  • Flaky salt

Instructions 

  1. To a small blender, add the banana, date, maple syrup, cocoa powder and milk. Blend until very smooth. It will be thick, so you can add splashes of water to reach your desired thickness.
  2. Add the chocolate mixture to a small pot. Over low heat, warm the mixture for 5-6 minutes or until steaming. Stir occasionally.
  3. On the burner next to it, add the oats, water and salt to a small pot. Over medium-high heat, let the oats simmer for 5-6 minutes or until thickened.
  4. To serve, portion the oatmeal into two bowls. Pour half of the hot chocolate mixture over each bowl. Top with flaky salt and eat warm.
