These Cacao & Walnut Fudge Balls are something I make at least once a week. They taste like the brownie bits you find in ice cream, they are so decadent yet filling, and when you put them in the freezer? Amazing. Chocolate lovers can unite on this one, it's fudgey, chocolatey, delicious and just. that. good.
1/4cupflax meal or chia seeds, or a mix of both! I like Garden of Life's Flax + Chia blend
3tablespoonscacao powder, or chocolate protein powder
2tablespoonsmaple syrup
2tablespoonsplant milk
1cube of dark chocolate, for shaving over the top
Instructions
Tear the dates in half and add them to the food processor with the walnuts, oats, flax/chia, cacao powder and maple syrup. Drizzle 1 tablespoon of plant milk on top.
Process the mixture for a few minutes, pulsing every now and then, until all the ingredients form a cookie-dough-like texture. If your mixture ever needs a bit of help, add the additional 1 tablespoon of plant milk.
When you have a dark chocolate brown mixture, move it to a bowl and let it chill in the fridge for 5-10 minutes.
Then use a damp hand to roll the dough into 12 equal-sized balls. Shave some dark chocolate on top and eat!
You can either store these in the fridge for up to 2 weeks or in the freezer for up to 5-6 months.
