This ricotta toast is my ideal mix of sweet, spicy, creamy and fresh. It uses blueberries and hot honey walnuts to add some unique and filling summer flavor! Plus it's done in 2 minutes or less, barely any cooking and prep required!
1tbspvegan butter , or regular butter, depending on your preference
1/2cupfresh blueberries
1/2cupwalnuts, chopped
1/4cupwhole milk ricotta cheese
For the hot honey
2tbsphoney
1tspFrank's Red Hot
1/4tspred pepper flakes

salt & pepper to taste
Instructions
Lightly spread the butter on one side of each slice of bread. On a skillet on medium-high heat, toast the bread butter-side-down until it is lightly golden, about two minutes. Flip the bread, turn off the heat and let the residual heat toast the other side.
Mix together the honey, Frank's red hot and red pepper flakes to make a hot honey. Pour this over the chopped walnuts and toss to combine.
Spread a thin layer of ricotta cheese on each slice of bread. Top liberally with the blueberries, then the hot honey walnuts. Add salt and pepper to taste if you prefer, but it doesn't need it!
