Blueberry, Chia and Flax Oatmeal

Consider this the be-all and end-all recipe for how to make gorgeous, filling and thick blueberry oats. It's all about technique and it makes these oats come out to the best texture and blueberry-muffin flavor.

Ingredients

  • 2/3 cup old-fashioned rolled oats
  • 1 tablespoon chia seeds
  • 1 tablespoon flax meal
  • 1 & 1/4 cup water
  • 1 cup blueberries, fresh or frozen
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon flaky salt
  • 1 tablespoon maple syrup

Instructions 

  1. Combine the 2/3 cup oats, 1 tablespoon chia seeds, 1 tablespoon flax meal and 1 1/4 cup water. Either cook this on the stove top over medium heat for 4 minutes, or microwave on high for 4 minutes.
  2. Remove the oats from the heat and gently stir in the blueberries and 1/4 teaspoon ground cinnamon. Some berries might break into the oats, which is completely fine.
  3. If the oats get too thick, dilute with a splash of the hot water until they are your desired texture.
  4. Top with 1/4 teaspoon of flaky salt and 1 tablespoon of maple syrup (see Note**). Eat warm!

Notes

**If you like your oats on the sweeter side, increase the maple syrup to 2 tablespoons.
