Pecan Pie Energy Bites

Let's be honest, pecan pie is truly the BEST in the pie world, this is a hill I will die on. So this recipe uses dates to get the caramel-y pecan pie vibes, plus maple syrup for sweetness and graham cracker crumbs to imitate that incredible crust. A healthy, energizing and delicious way to get your pecan pie fix!

Servings: 5 balls

Ingredients

  • ½ cup almond flour, packed
  • 4 dates, chopped
  • 2 tbsp pecans, chopped
  • 2 tbsp maple syrup
  • 2 tsp olive oil
  • ¼ sp vanilla extract
  • Pinch of salt
  • 2 tbsp graham cracker crumbs

Instructions 

  1. Mix together all the ingredients except for the graham cracker crumbs.
  2. Once a dough forms, roll into balls and toss them in the graham cracker crumbs.
  3. Eat whenever! These will keep in the fridge for up to 7 days.
