There is nothing I love more than a simple honey burrata toast. It’s sweet and creamy, and you can dress it up or dress it down depending on your mood (and to be honest, the state of your fridge).

It’s up there in one of my most simple breakfasts, but sometimes simple can be the most delicious. I always like to think I’m innovating with food, but sometimes it’s fun just to do cozy recipes you know? This honey burrata toast with pepper, lemon and thyme is one of my top comfort foods, and if you try it I hope you’ll feel the same.

But first, what is burrata?

Burrata, my one true cheese love, is a hybrid of two types of cheese making. It’s a ball of mozzarella that encases stracciatella (a stringier form of cheese) and cream. What you end up with is a mild, creamy cheese that holds together a wonderful texture.

Burrata is a pretty mild cheese, which is why you often see it paired with foods with a lot more acid, like balsamic vinegar, tomatoes, lemon, etc. But burrata is also a great vehicle for sweetness. The creaminess plays well with sweet flavors and adds an extra richness to a recipe.

If you still aren’t a burrata person, sub it out for another mild, creamier cheese. Here are my favorites in order:

  • Ricotta
  • Mascarpone
  • Spreadable goat’s cheese
  • Melted raclette or double cream brie

How to make the toast

I prefer to serve this toast on thick, crusty whole wheat bread. It grounds the sweetness and acid of the recipe with a nice earthy flavor. I like to make my toast in the oven at 350°F and toast for about 5-10 minutes. But if you have a toaster – GOD SPEED, and wow am I jealous.

One of these days I will invest in a toaster….one of these days.

Why I chose these flavors for this honey burrata toast

I wanted this toast to be simple to make, but still jump off the page when you taste it. I combined sweet, creamy, salty, fresh and acid all with a splash of mild “heat” from black pepper to make the perfect flavor combo. Here’s what I used:

  • Burrata – obviously, for the creaminess
  • Honey – as the sweetness and richness to play off the burrata
  • Salt and pepper – integral to the burrata, salt enhances sweetness, and pepper adds mild hotness that helps break through the one-note richness
  • Lemon zest and lemon juice – the zest adds brightness and the juice adds acid. It’s an easy way to add dimension and I PROMISE you don’t want to skip it.
  • Thyme – for freshness. Thyme is an underrated herb and definitely could not be skipped in this toast.

What to do if you don’t have lemon or thyme

Now I said both of these are integral, and in a way I meant it – BUT if you are in a pinch and need a toast (which happens to me all the time) here’s what I recommend.

Sub the lemon for a little bit of balsamic vinegar, it achieves the same brightness without overwhelming the other flavors.

Sub the thyme for either parsley, basil or even dried rosemary. I don’t love the idea of other herbs here, but feel free to play around!

Honey Burrata Toast with Lemon & Thyme

This honey burrata toast with lemon is simple but satisfying. It's rich and flavor but minimal with ingredients, one of my all-time favorites.

Servings: 4 toasts

Ingredients

  • 4 slices whole wheat bread
  • 8 ounces fresh burrata
  • 1 tablespoon honey
  • Salt and pepper to taste
  • 1 lemon for juice and zest
  • 8 sprigs fresh thyme

Instructions 

  1. Toast the bread to your liking and set aside.
  2. In a small bowl, whisk together the burrata, honey, salt and pepper until creamy. Taste and adjust seasonings to your liking.
  3. Spread a thin layer of the burrata mixture onto each piece of bread.
  4. Grate lemon zest on top of each piece of toast. Then cut the lemon in half and squeeze about a teaspoon of juice onto every slice.
  5. Top the slices with fresh thyme and more pepper.
  6. Serve immediately 🙂
