The three simple steps for this recipe

The whole recipe takes about five minutes to make, and all you have to do is pour, mix and shape. They taste like tiny brownies, plus the almond flour keeps you full for hours! I love that it uses maple syrup, but you get almost none of that overly-sweet maple taste.

What is Dutch process cocoa powder?

The secret to this recipe is the Dutch process cocoa powder – don’t skimp on it!

Dutch process cocoa powder is cocoa that has been alkalized to reduce its natural acidity. This type of cocoa powder is used in baking when chocolate is the main component of a dessert. It’s dark, flavorful, and chocolatey and the star of the show in this recipe.

FAQ

Can I double this recipe?

Of course! To make eight balls of fudge, double every ingredient. To make 16 balls of fudge, triple every ingredient.

Do I have to use Dutch process cocoa powder?

No, but these Fudge Bites won’t come out nearly as rich and flavorful. Natural cocoa powder is sharp and will add an acidic edge to the fudge. It doesn’t compare to the smooth profile of the Dutch process cocoa powder!

How should I store these Fudge Bites?

They will last 5-7 days in an air-tight container in the fridge, but will keep for up to six months in the freezer!

Ingredients

  • ¼ cup almond flour, packed
  • 2 tsp cocoa powder
  • 1 tbsp maple syrup
  • 1 tsp neutral oil
  • 1 Pinch of table salt
  • 1 Pinch of flakey salt, for topping

Instructions 

  1. Mix together all ingredients besides the flakey salt in a small bowl.
  2. Roll into 4-5 equal sized balls.
  3. Top with flakey salt and eat!
